365PDX#81: Slappy Cakes on Belmont.

Last month some friends of ours invited us to meet them at Slappy Cakes on Belmont for breakfast. “Why on earth would I pay someone so I can make my own pancakes!”, was my initial response.  Of course, my wife Joyce thought it sounded like a great idea, so half an hour later we found our selves in Portland’s newest and only U cook pancake restaurant.

You don’t actually have to cook your own pancakes,they have a pretty full breakfast and lunch menu, and use local and organic produce (some of which they grow in their backyard garden). Tables do have built in hot pads, just in case you want to join in the fun and make your own flap jacks.. Just order a some batter and toppings, and get creative.

Our group made plenty of our own pancakes (which quickly turned into a competition) and a few things from the menu.  Some of the dishes needed a little work, but like any new restaurant, some adjustments usually get made the first few months.  My personal favorite was the carrot pancakes- who would of ever thought they could be so good?
